Naaz Khan, owner of Maison Culinaire, is a pro at creating recipes free from processed ingredients, dairy, refined sugars and gluten. In her episode of Community Kitchen, she showed Lurbz how to make a vegan, dairy-free, sugar-free chocolate mousse using Naturally Almond‘s almond milk.
It takes less than five minutes to whip up this chocolate pudding with simple ingredients from your pantry and fridge. Trust us, you’ll be blown away when you realize something this chocolate-y and sweet has no added sugars. All of its sweetness comes from the cashew nuts. The best part is you can’t taste a difference at all!
This healthy chocolate pudding recipe is very versatile. You can play around with it by using different nuts to find your favourite taste and texture (but remember to soak them!). Or, you can switch things around by adding a few drops of peppermint extract, maple extract, or even coconut extract along with the vanilla. For a nut-free version, try oat or soy milk instead.
Ingredients
1 cup chocolate
1 cup cashews, soaked for at least 4 hours
3/4 cup almond milk
1 teaspoon coffee
1 teaspoon vanilla extract
Directions
Place the chocolate chips in a heat-safe bowl and microwave in 30-second intervals, stirring in between to make sure the chocolate doesn’t burn.
Combine all ingredients in a blender and process until smooth.
Pour into small bowls or ramekins and cool in the fridge for at least 2 hours until it thickens.
Eat whenever you feel like it. It keeps in the fridge for four days, but it’ll disappear way before then.
