If you don’t have berries, kiwis or strawberries at home, you can use substitute them with almonds, bananas and apples.
INGREDIENTS
Pancake Batter
1 cup whole milk
2 tablespoons white vinegar
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons brown sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
Butter or cooking spray
Owl
1 Kiwi
2 strawberries
4 blueberries
A handful of green grapes on the stem
1 pretzel stick
DIRECTIONS
1 In a large bowl, mix together milk and vinegar. Let stand 5 to 10 minutes at room temperature. The milk will be slightly thickened and may see small curdled bits.
2 In a separate bowl, mix all your dry ingredients together.
3 Whisk in your egg and butter into the milk, add your dry ingredients to the wet mixture and mix gently till the liquid and flour are combined. Don’t overmix the batter where the batter ends up completely runny and smooth.
4 Heat a stainless steel pan or griddle on medium heat, spray with cooking spray or butter and heat for 20 seconds.
5 Pour 1/4 cupfuls of batter onto the pan with a ladle and cook until bubbles appear on the surface. Flip with a spatula, and cook for less than a 1 minute on the other side.
6 Repeat the cooking process until batter is finished.
7 Begin to prepare your fruits to create your pancake owl.
Pancake Owl: The Elements
Body and head: 1 large round pancake
Eyes: 2 kiwi slices and two blueberries.
Nose: 1 strawberry slice, cut into quarters.
Feet: 2 berries of your choice.
Wings: 1 strawberry, cut in half.
Tree Branch: Pretzel stick and green grapes as leaves.
Pancake Owl: The Assembly
1 Put the large pancake at the bottom of a plate.
2 Add 2 slices of kiwi for the eyes and top each with a blueberry.
3 Add the strawberry quarter for the nose.
4 Place the 2 strawberry halves on the side for the wings.
5 Place the two berries at the bottom of the pancake for the feet.
6 Under feet, place the pretzel stick for the branch and surround with green grapes for the trees.
7 Your pancake owl is complete, drizzle some pancake syrup on top and enjoy with your kids!
