Everyone knows Saturday is soup day. But that long-standing cuisine tradition didn’t stand in the way of Sunday’s successful staging of “Caribbean Soup Fest,” presented by the Rotary Club of Port-of-Spain. St John’s Ambulance Hall, located at Fitzblackman Drive, Woodbrook, was the venue for the Sunday soup experience, which, according to Rotary officials did well.

It seemed patrons, in anticipation of the soup dishes, cut back on servings of their Sunday lunch, which surely would have included macaroni pie, callaloo with baked or stewed chicken, leaving room for the assortment of soup dishes prepared and served by the crème de la crème of T&T’s culinary community. Chefs from 15 restaurants and hotels, including Kam Wah, Angelo’s, El Pecos, Sunday Kitchen, Tamnak Thai, Apsara, Chaud, Veni Mange, Jaffa, Carlton Savannah, The Normandie, Cascadia Hotel, as well as gourmet chef Bernard Long, ladled out their Caribbean creations.

Sponsored by First Caribbean International Bank, The Caribbean Soup Fest was held to raise funds for the Rotary Foundation’s commitment to its local charitable projects as well as Rotary International’s efforts in the global fight against polio. But as fate would have it, soup wasn’t the only delight on the night since the entertainment line-up comprised reigning national Panorama champion Silver Stars Steel Orchestra and Los Alumnos de San Juan whose ideal mix of pan and parang had patrons dancing and cheering.
