All that home comfort you love, but a little easier on the tummy for those who don’t do well with dairy. Bake this healthy provision pie with Naturally Almond almond milk for a perfectly rich and creamy texture, full of great flavour, easy to make and always a crowd fave.
INGREDIENTS
1 cup cassava
1 cup eddoes
1 cup sweet potato
1/4 cup olive oil
1/3 cup Naturally Almond almond milk
1/3 cup cheese
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon garlic
1 sprig rosemary
1 tablespoon breadcrumbs
DIRECTIONS
1 Wash and peel ground provision. Dice into 1-2 inch chunks.
2 In a medium-sized pot, add the chopped provision and fill with water. Bring to a boil over medium/high heat then reduce to a simmer for 15-20 minutes.
3 Test for doneness by poking a piece of provision with a knife. If the knife goes through with ease then it is ready. Remove from the heat, drain and set aside.
4 In a small pan add the olive oil over low to medium heat. Add the onions and garlic and sauté for 2 to 3 minutes until softened.
5 Add the milk, salt, pepper and rosemary. Remove from heat when it begins to simmer.
6 Add the milk mixture to the ground provision and mash until smooth. Transfer to a baking dish and top with breadcrumbs or cheese.
7 Bake on 400° for 10 minutes until golden or low broil for 5 minutes.
